I plan to finish this reference sheet soon, so I will be doing 3 expressions of my choosing unless you get back to me within the week to tell me what you would like, then I will deliver the ref sheet to you and consider the transaction completed. Thank you!'
Then I would do exactly that. A week is more than enough time and if it's actually important to them, they'll get back to you. If it isn't, they'll be happy with what you give them. It should work out either way.
If, for some reason, they try to cause drama over it, they wouldn't have a leg to stand on with such poor communication.
