I'm sorry, but that reply she sent to you is absolutely disgusting. It almost seems like she is trying to make you feel guilty for wanting your art in a timely and reasonable manner.
Of course she should stop the commission business. She's clearly quite horrible at keeping up with it. Her going to a video game firm is incredibly scary and I wouldn't be shocked if she didn't last long because you HAVE to keep in communication to do that kind of work.
I feel as if she's making mass excuses to make it OK, too. No. Just no on so many different levels.
Best of luck, but at this point I'd take what money and art I could and run for the hills (even with her no refund policy, which is really convenient for her considering.)
